Ed Hardy Birthday Cake

A client loved the design of my Ed Hardy cupcakes so much she requested a cake for her husbands birthday. So I created Giant fondant playing cards (Ace, King & Queen) to top a bright blue fondant cake. The cake was a 2-layer vanilla cake with a Chocolate Buttercream filling. Thank you to my so Gavin for helping to blend, roll and knead that large blue fondant cover :)

Ed Hardy Cupcakes

Inspired by Ed Hardy I spent my morning drawing and painting these Blue Velvet cupcakes. I used a traditional Red Velvet recipe but, ofcourse, used Blue coloring instead of the Red.

A Berry Sweet Potato Pie

I love Sweet Potato Pie!! It is the ultimate "comfort food" treat.

I also love to experiment with my recipes to fancy them up some...so I am thrilled to share this recipe I created recently.
A Berry Sweet Potato Pie

Ingredients:

1 1/4 cups of mashed, cooked sweet potatoes
1/4 cup butter, melted
1 1/2 cups of sugar
1 teaspoon Hazelnut Rum or rum extract
1 teaspoon vanilla extract
1 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 grated nutmeg
1 tablespoon all-purpose flour
2 large eggs
1 cup evaporated milk

1 1/4 cup of fresh berries - combo of blackberries, blueberries and raspberries

1 (9 in) unbaked deep dish pie shell or your favorite recipe for a 9 inch deep dish crust

Instructions:
Preheat oven to 375

Combine the sweet potato, butter, sugar, extracts, salt, cinnamon, nutmeg and flour in a large bowl. Mix until well blended and smooth. Stir in eggs and the milk.

Place berries in bottom of pie shell. Pour Sweet Potato mixture on top. Cover your pie edges to keep from burning.

Bake for 15 minutes at 375 and then reduce oven to 350 degrees. Bake 30-45 minutes longer until the pie sets in center.

Recipe Notes: I also like to peel a small apple (whatever you have on hand), dice it up and toss in the bottom with the berries.....2 yummii

Enjoy!!!
Today is the first day of my blogging life.
I have finally given in and created my first blog site. I am hoping that this will be a creative outlet for my baking habit :)
